Whats an ABT? How do you make a sugar free BBQ sauce? Why does meat have to rest? Our world of BBQ, that we all love, is so complex that no one knows everything about it. Even people out there that live and breathe BBQ 24 hours a day still teach each other new things. We’ve been trying things out by trial and error for hundreds of years. Actually, most of the “facts and rules” about BBQ, smoking, grilling, and other forms of outdoor cooking are a consensus among the majority of “pit masters”.Even all of these “facts and rules” are not all agreed upon. There are still disputes among the ranks about definition of terms, sauces true to a particular style, and cooking techniques that are either right or wrong. But, as the drama and controversy continues in the background, we continually prepare and cook, trying to improve our techniques, and thus our own rules and facts. Yes, we are a stubborn bunch (drama... controversy… disputes), but we love what we do. And we help each other.Beyond BBQ Basics includes a few questions about BBQ that were submitted to me on my website www.original-bbq-recipes.com. These questions represent things on the minds of my visitors and hopefully people in general.Inside you will find out about grilling chicken, smoking butt, how to tell when its done, and keeping things fresh. We will also discover how to maintain temperature, the differences in sauces, lost recipes, and the use of whiskey and beer. There is other stuff too, but Ill let you read for yourself. I have answered all of these questions to the best of my knowledge for the visitor, and now you.. I am by no means an expert, but simply an average person that loves BBQ. I have been BBQing and grilling, though, for over 40 years. Please take this information and put it to good use. You will always learn more by doing than by reading. The more you can learn, the more confident you will become. All you need is a little good information, experience, and confidence. And it all begins to snowball after a while.Just start with a little new information. Then you try it out (experience). From that experience, you gain confidence and more information. That boost in confidence and new information makes you want to try again (more experience). And so on…
